I whipped this up for lunch one weekday morning when the boys were busy playing Lego. I love how easy it is to make and yet so delicious and satisfying.
Ingredients:
Macaroni, cooked according to instructions, enough for 3
1 Onion, finely chopped
1/2 Chicken breast, chopped
1/2 cup frozen sweetcorn
75g grated cheddar
thinly sliced mozarella (about 4 -6 slices)
200ml fresh milk
30g plain flour
breadcrumbs
butter
Ingredients:
Macaroni, cooked according to instructions, enough for 3

Preparation:
1. Stir fry onions in butter and toss in chopped chicken and sweetcorn and salt/pepper to taste. When cooked, add to cooked macaroni and transfer to baking dish.
2. Make cheese sauce by adding plain flour to melted butter, followed by milk which you stir in slowly. Simmer for a few minutes and once thicken, add in the grated cheddar and stir till sauce thickens.
3. Pour cheese sauce onto the macaroni and chicken mixture and stir through.
4. Arrange the mozarella slices on top to cover the dish.
5. Generously sprinkle of breadcrumbs on top and bake in 200 deg cel oven for 20 min.

As with all my recipes, I always love to try out variations - add a little of this and omit some of that. Just the kind of fun I look forward to in cooking. It is important to me that I have my own input so I rarely follow any recipe perfectly, if there is one to follow in the first place. As I was cooking this macaroni cheese bake, I already have heaps of idea how I would like to experiment with different ingredients when I make it again.
My only complaint for now is the lack of time. There are so many dishes that I want to try to cook, bake and create! My head is bursting with ideas but there aren't enough hours in a day to experiment. Well, I shall be patient. One day, I will be able to do all that.
