My Alfredo Pasta

This turned out to be really delicious. Not exactly as quick as I was hoping it to be, but it proved to be all worthwhile, considering everything was homemade.

I made this for lunch today, after taking stock of what I have in the fridge. The weather and hectic schedule recently had prevented me from doing much grocery shopping. 

With 2 hungry boys and a starving me, this came to mind - my version of the Alfredo pasta with bacon and courgette, topped with pan-fried chicken strips.

This was the pasta I used for the boys' lunch. See the cute shapes of motorbike, airplane, car and train!! I save them for the kids and personally, I always prefer larger pasta, especially with cream based sauces. 

For today, I favoured an organic fiorelli pasta that I have in my store cupboard (did I ever mentioned I have over 15 types of pasta in my pantry?) 


The boys self-fed. After a good 35 min, they left their chairs groaning, with bits and pieces remaining. It was after all, a really filling pasta meal with the cheesy sauce on a large portion of pasta and an enormous strip of chicken. Needless to say, my plate was licked clean.
