Best Ever Beef Lasagna



The other day, I decided to make lasagna for dinner to use up the pot of ricotta cheese I have.

E was out for drinks with his mates. So I had to watch the kids while I prepared and cooked throughout the hour and an half that I was in the kitchen.

There was so much snatching, screaming and crying from both boys as they fought over every toy! It drove me crazy!

Thankfully, the lasagna turned out to be the best I have ever made.














Between the kids and me, we ate so much! Too much! 

The 4yo had the largest portion he ever had in one meal and lapped up everything within ten minutes. 

Even little Chip finished up all the beef, pasta and tomatoes on his plate.

I was the happiest mummy that night!

I am very flattered by the numerous requests from friends within an hour of posting this entry, asking me to share this recipe! :) 

I gotta add that this recipe is my own, adapted from many others which I've tried. This is by far, my favourite. It is VERY POPULAR with my kids, who normally won't eat tomatoes and beef.


My Family Recipe For Beef Lasagna

Ingredients:

6-9 sheets no-precook lasagne (depending on size of each sheet and width of your lasagne dish)
30g freshly grated Parmesan or Cheddar cheese

Meat Sauce
olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 garlic clove, finely chopped
1 celery stalk, finely chopped (I often omit this as hubby dislikes it)
400g lean minced beef
600g canned chopped tomatoes
2 tbsp tomato paste
2 sprigs thyme
2-3 bay leaves
sea salt and freshly ground black pepper

White Sauce

40g unsalted butter
40g plain flour
350g fresh milk
1 tub 250g Ricotta cheese
50g freshly grated Cheddar cheese
sea salt and freshly ground black pepper


Preparation:


To Make Meat Sauce
1. Saute onion, carrot and celery over low heat in olive oil for 3-4 min. Add garlic and beef and cook till meat is browned.
2. Stir in chopped tomatoes, tomato paste, thyme, bay leaves, salt and pepper. Bring to boil, then reduce and simmer, covered, for 20 - 30 min.
3. Remove lid and cook further, stirring occasionally till most liquid has evaporated.
4. Season if required. Discard herbs and take off heat to cool.

To Make White Sauce
1. Melt butter in saucepan and stir in flour. Keep stirring for 1 min.
2. Gradually whisk in milk. Bring to boil and simmer for 3 -4 min till liquid thickens.
3. Remove from heat, stir in grated Cheddar cheese and mix in Ricotta cheese. Season and set aside.

To Assemble

1. Cover bottom of large lasagne dish with a couple tbsp of each sauce.
2. Cover with 3 sheets of lasagne. Spoon over half the meat sauce and cover with a third of white sauce.
3. Cover with 3 more sheets of lasagne. Now with remaining meat sauce and another third of white sauce.
4. Cover with last 3 sheets of lasagne and finish off with remaining white sauce and then sprinkle Parmesan cheese.

Bake in preheated oven of 180 deg cel for 30-35 minutes, until golden and bubbling.

Playtime






Personal Goals for 2009



The one thing that I do at the start of every year is to set some goals for myself. 

I often feel I am juggling so much on my plate and it is so easy to be carried away by the daily nitty-gritty. 

I hate the feeling that I could have done more or achieved more when I reflect in a few months' time. So I like to have something specific to aim towards. 

Having a list of targets to shoot for also drives me on days when I feel the weight of the world on my shoulders. It helps me prioritize. 

So here are my 10 simple goals that I like to work towards this year. Some are more important than others. For each goal, I also have more specific plans in mind but I won't go into details. 

1. Take good care of myself. 
Eat well, exercise more. Have weekly alone time without the kids. Pamper my body and soul. Take charge of my own happiness!

2. Take good care of my husband.  
Spend more time together. Love and pamper him. 

3. Take good care of my children
Enjoy them everyday. Create beautiful memories and wonderful experiences. Keep up with our weekly homeschooling. Nourish their bodies and nurture their souls.

4. Learn a new skill.
I haven't decided on this one. Maybe pick up tennis or inline skating. Recently I saw some contemporary and exotic dance classes which really fascinates me. Or maybe sign up for art class or photography lessons. Urghh!!! I need to think more about this. I have way too many interests!

5. Revisit an old hobby.
Resume my salsa lessons. I also love to play netball again if I have time. That used to be the second love of my life.

6. Spend more time with my mom.
I like to take her for a short holiday. Invite her out for dinners more often. Visit her with the boys more.

7. Cook and bake new recipes.
My cooking class will be useful for this. Maybe I will take a short advanced course on baking. I plan to try a new recipe every week. 

8. Read more books.
I used to read everyday before N was born. I probably read only about 12 books in the last 2 years. 

I am currently reading 2 books - Raising Gifted Kids by Barbara Klein and Siblings Without Rivalry by Adele Faber, Elaine Mazlish. I have also just started reading The Genius Factory by David Plotz yesterday.

9. Run a race.
This is one thing I couldn't do last year for health reasons. I missed the race that I was working towards. Not going to miss it this year. I still want to run a marathon one day. 

10. Fundraise for charity.
I used to fundraise millions for charity. This year, I want to use my fundraising experience to do something for local charities, however small it is. 


I am happy enough to achieve some, if not all. After all, life is about living and loving the journey.

The Curious Mind



I can't remember what started it all, but the 4yo is really into volcanoes lately. 

Typical of his inquisitiveness, he asks heaps of questions the moment he wakes about the topic he is currently passionate about. I am more than happy to feed his curious mind. 

We visited the library for additional resources and he chose four books which he devoured eagerly, night after night. 

I am thankful too, that E shares my passion in satisfying our kids' hunger to learn and love for knowledge. He has been reading about the topic with M at bedtime while I answer all his questions in daytime. 

Even the 2yo gets influenced by all the discussions. He ran to me the other night 'Mama mama! Volcano erupts and hot lava comes out!'  ^.^

Lunar New Year 2009























We brought the boys to Chinatown last week to feast their eyes on the busy streets that were buzzing with activities.

They were curious at first and questioned us on everything they saw. But after a short while, they found more fun just dashing around on the busy streets. It was so hard keeping track of them, especially the one who is under a metre tall.

Other than that, the boys did some simple crafts related to the Lunar New Year theme.

They made some cards with different materials just for the fun of it. And Poshie made a red packet lantern with my help.



We talked briefly about "Spring" and the chinese character 'chun'. 

It was so funny to watch little Chip shouting excitedly 'Papa look! That is 'chun'!' when E came back from work that day, as if to educate his papa.

We did our usual visitings on the first two days. Needless to say, we stuffed ourselves silly with all the good food offered by the hospitable hosts and brought back more!  

The best part to me is the opportunity to catch up with relatives whom we seldom meet, except on festive occasions. Of course, it is always precious to watch the kids have fun with their older cousins and relatives. 


I couldn't resist posting this one of Chipsy tasting his first love letter cautiously. After the first bite, he needed no more persuasion. In fact, he required some serious restraint and distraction from eating to his heart's content! 

Thankfully they aren't keen on all the other sweeter treats like pineapple tarts, that are in abundance at every house we visit. Not that I would mind them tasting these festive goodies anyway, as long as they aren't replacing appetites for proper meals. But since they voluntarily detoured from these sweets, I am happy not to pursue.

Say Hello to the 'Terrible Two'


Chipsy complained loudly that his leg hurt. I took one look and was relieved. It just looked like there was some dry brownish bit left from his old mozzie bite. 

He must have scratched it too much and felt it stinging. I asked him again if it was painful and if he wanted some cream and plaster. 

'Yes, yes Mama. Put cream and plaster. Here.'

I gave the area a little attention. Applied the cream and stuck a plaster on it and went back to what I was doing. A minute later....

'No cream! No plaster! TAKE Out plaster! Mama, TAKE OUT PLASTER!'

Another two minutes of negotiating with him to leave the plaster on and I gave up. Took off the plaster and cleaned the area with a wet wipe. As I was dumping the used plaster and tissue into the bin, 

'I want the plaster! I want plaaaAASssteeeeerr'... followed by BIG BIG wails..... 

I knew what was going there and then. And as I silently cursed the official arrival of the Terrible Two monster, I was also a little amused with whatever was going on. 

Instead of letting it frustrates me and get all upset, I tried to see the light side of it all. After all, I've seen this behaviour before, just two years ago with my first born. I am the experienced mum now. Been there. Done that. Heh. 

So I calmly walked over to my utterly upset little 2 yo with a smile and as much patience as I could summon up, straightened the piece of cute red plaster and stuck it back onto his leg. 

It took another few minutes of distracting him with stories and toys to get out of that little episode. Now, I gotta brace myself for more to come.

A Walk In The Park





I love to take the boys to the Botanic Gardens. 

Sometimes we go in the mornings if I feel we need a healthy dose of Vitamin D. 

Otherwise, we venture out around 4pm and stroll till our legs are tired and tummies are rumbling. 

I can't wait to return to London in a few months' time. Just the thought of spending lots of time in the huge parks and be surrounded by greenery makes me smile.

Cooking Up a Storm

One of my Christmas presents from hubby was a prepaid cooking course of eight 3-hr lessons at a reputed cooking school. He paid top money not because I can't cook (so he says), but more as an opportunity for me to hone my skills given my passion for cooking.

The lessons are the hands-on type and the Chef is a charismatic and very funny French Executive Chef-cum-owner of a newly opened French restaurant.

While I am not a novice at cooking, there are always things to learn, especially from the experts. 

In my 2nd lesson for instance, we learnt so much about beef - the different cuts, the best way to cook them etc. Each team of 2 - 3 pax made 3 sauces to accompany the sirloin steaks, a yummy pumpkin soup and a potato gratin. 

Though I have made the soup and gratin often, it is always interesting to try out different versions and recipes. 

Making the sauces were the real eye-opener. Of the bearnaise, black pepper and shallot-red wine sauce, I think the last one is a true knock out. I tried making it early this week to serve with a gorgeous ribeye steak. E was so full of praises! 

At $170/session, it is a fantastic deal that includes a large bag of quality goodies and a thick dossier of notes and recipes. There's free flow wines and gourmet coffee during the lessons and generous servings of whatever we cook for lunch. 

There was also so much (clean) leftovers to bring home!! Like last week, I brought back a 200g Angus sirloin steak for E as my team-mate doesn't beef. 

And oh! Can't forget the bag of approx. 1 litre of restaurant quality beef stock which was leftover from the big bag the Chef used to make the red-wine reduction. I used part of it for my shallot-red wine sauce I made at home this week and froze the rest. 

It has been a fabulous experience so far. I am already salivating just thinking of the savoury quiches and French style stews that I will cook in the next session. 

That Yellow Cob



The one food which they can't have enough is a large cob of steamed corn.

No butter. No sauce. Just plain ol' healthy sweetcorn, steamed with love.

Frankly, I am the happiest in the family when my boys fight over it. After all, I know many kids who won't go near a vegetable voluntarily.

New Art School

The 4yo has been going to a new art school since early Jan. Thrice so far. 

Though we like the former school, they have moved to an inconvenient location. After checking out 5 other art schools, I decided this one seems to be the best.

What I like about this new place:
- the theme changes every week
- the class is of mixed age group, 
- focus on mixed media
- each lesson comprises of at least 1 drawing, 1 painting and 1 free-expression piece. First 2 pieces are theme-based and teacher guided if necessary.
- teachers are VERY nice and encouraging
- kids are urged to express instead of insisting that everyone 'must' draw the same thing or be given a template
-very open environment so I can see what kids are doing, unlike previous place which didn't even have a window to peep into
- Another big plus, it is much cheaper and at better locale than the previous school.

He wanted to draw a taxi in a farm. So he included a cow and pig. At first glance, I thought they were a giraffe and a cat! But I kept that opinion to myself and praised him for his efforts. That was his first try to draw these animals on his own.


His first attempt to draw a burger, fries and cola! Makes me laugh to see the fish in his fish burger when everyone else in class drew a hamburger.  Painted with watercolours.


The theme was to draw scuba-divers and activities under the sea. He insisted on adding a Police Boat, shark and jellyfish. Not sure why there is a house in the sea though.

Craft: Making a Lion Face

I laughed a lot when the boys were working on this craft. 

When I announced that we were going to make a lion that afternoon, they just couldn't wait another minute! Little Chip dropped all his toys and dashed to the red table and positioned himself like an obedient pup. 

My 4yo tried to be the cool lil dude and strolled to the table and asked me in his most polite voice, 'Mama, may I get started now please? I just can't wait any longer'. 

The boys painted the paper plates for the lion's face the day before. Once I handed all the materials to them with some verbal instructions, I stood back with my camera.

 

It was hilarious to watch the 4yo fold some brown strips to form curly mane and Chipsy tried to stick two whiskers on the mane. 

I didn't have to say much as they eventually corrected each other.



Now the kids want to add a body to the lion's face, so we will work on that once I can find some time.

Our Menus At A Glance

I don't have the habit of planning a weekly menu. The most I would go is to plan what I would cook for 2 lunches and 2 dinners. 

I like to be spontaneous when it comes to doing outdoor activities with the kids. Pre-planning a weekly menu means I also need to plan our day activities for a week accordingly to allow for sufficient cooking time.

So often, I may just head out with the kids to the parks whenever we feel like it. Or plan activities for post dinner. On such days, the dinner menu depends on the ingredients available in my fridge/freezer/pantry and the time I have to cook. That's the advantage of a well-stocked pantry and freezer! 

Of course, if I want to cook something fancier that requires longer preparation/cooking time, then I do plan the day's routine around it.

Here's a snapshot of our two weeks' meals. All homemade and freshly cooked. I rarely cook on weekends these days as I am not home during lunchtime and in evenings, we usually dine out.


Last Week's Menu: 

Mon: 
L: Egg noodles with vegetables and tofu
D: Roast chicken with new potatoes and steamed peas
Also baked 12 banana and almond (flakes) muffins

Tue:
L: Panfried seabass served with wild rice and steamed broccoli/carrots
D: Macaroni cheese 

Wed:
L: Onigri, meatballs and stir-fried vegetables
Also made a bento for Marcus (see Bento #30)
D: Baked salmon with dill sauce and papardelle

Thur:
L: Pan-fried chicken served with steamed corn and mashed sweet potato
D: Vegetable (broccoli/cauliflower) stir-fry, oriental pork dish served with brown rice

Fri: 
L: Chinese soup (loaded with veg and pork bone) with wild rice
D: Braised sesame chicken with stir-fried cabbage and rice (only for the boys)


This Week's Menu:

Mon: 
L: Tuna cheese sandwich with whole wheat bread, fruits and yogurt
D: Pan-fried ribeye steak with shallot-red wine sauce, served with oven chips (for adults)
Baked salmon with mashed sweet potato (for kids)

Tue: 
L: Braised pork, stir-fried veg with brown rice
D: --- dine out ---

Wed: 
L: Oriental style minced beef served with garlicky broccoli and Jap rice. Also made a bento for Marcus (see Bento #31).
D: Chicken stew

Thur: 
L: Beef lasagna
D: Four cheeses pasta by E (I was out)

L: Kailan chinese style, sweet and sour pork with brown rice

Bento #31 - Doggie Bento



I made this today for the 4yo's school lunch. I am very inspired recently to make animal-themed bentos. So pleased with how the bento turned out. 

Bento contents: 
> For the doggie face - teriyaki minced beef, Jap rice, scrambled egg with nori seaweed for eyes and nose. 
> Stir-fried garlicky broccoli, half apple, cube cheese and 1 Oreo (Marcus' current fav cookie) treat!

I used the 550ml Lock n Lock container and also included a 250ml pack UHT milk. 

Can't wait to hear his verdict on his lunch. :)

No Longer Just Doodling



Lately, the 2yo has been drawing lots of circles and spirals. And they all represent something.

Take this piece for example. He told me there are clouds and a sun here or a bus there. And more clouds and more suns and maybe even a moon to accompany it all. 

I love this phase! I remember going through it with M about 2 yrs ago, admiring every piece of artwork with pride and enthusiasm. 

Chipsy just drew this Sun with a smiling face this afternoon. Every stroke was by him! :) 



This is like the exciting incubation period. We wait patiently but with much anticipation and apprehension for the explosion of some hidden talent that is bursting to surface. 

It is the warm-up stage. In a few weeks or perhaps months, the marker pen will no longer be just doodling but marking some recognizable shapes and forms. 

I just can't wait!

My Almost Perfect Weekend



The weekend was welcomed with warm snapper burritos and frozen lime margaritas at the Cafe Iguana. In the company of two girlfriends, we chilled with jugs of my favourite cocktails as we chatted about nothing and everything. It couldn't be a better night out! 

The weather was that of a typical gorgeous January evening, perfect for al fresco dining. With lots to eat and drink, beautiful people to watch and stimulating conversations, we stayed out till we couldn't stay awake much longer. Hah! By the time I crawled into bed, it was 2.30am!

On Saturday, I headed to the cooking school for my second lesson after a light breakfast. Oh boy, I had so much fun! We learnt so much about beef - the different cuts, the best way to cook them etc. In the course of 3 hours, each team of 2 - 3 pax made 3 sauces to accompany the sirloin steaks, a yummy pumpkin soup and a potato gratin. I will blog in separate post on the details. 

Just like the previous lesson, we ate the yummy food we cooked for lunch in a nice adjoining room, with free flow wines provided by the cooking school. Everyone was chatty and friendly, as we tried to keep some light conversations going in between mouthfuls of our sumptious meal. I had such a lovely time! 

In the evening, I made it to a much needed session of hot yoga where I roasted in the 40 deg cel room with other fanatics and we twisted and bent every imaginable part of our body. By the time I got out of shower, I was so ready to cuddle my boys. Gosh! I had missed them so much just from being out and about without them. 

My Sunday was a rather typical activity-packed day. I took the 4yo to art class and while waiting, I did my homeschooling planning over a latte. I am so pleased that I managed to plan 3 weeks of activities in that 1.5hr! 

After lunch, we dashed for his 30 min piano class during which I marvelled and marvelled over him. That was followed by some quick grocery shopping. The rest of the evening was family time till the kiddos were tucked in bed. Then it was BBQ stingray for supper before we snuggled up to watch the breathtaking series of 24 to conclude my hectic, but almost perfect weekend. Bliss........

Thoughts on Schooling

I started scouting for pre-schools for M in late 2006 with the plan to enrol him only in 2007 when he was turned 2.5 yo. I visited 8 kindergartens/pre-schools and spent between 1.5 to 4 hours at each place. I was thorough in my research as I spoke to neighbours, teachers, principals and founders of some schools. I observed how the lessons were conducted, peeped from outside the classrooms, scrutinised the menu (as most schools provide snacks/one meal) and their lesson plans, asked millions of questions about their curriculum etc... Finally I shortlisted a few and went back once or twice more, just to be sure. After the long process, I decided on the one that suits us best, which is where M goes to now.

So when it comes to my choice of pre-school for Chipsy, it should be easy - follow the brother!
 
But for some reasons I can't pinpoint, there is a nagging thought that this school may not be as suitable for little Chip. Maybe because my confidence for the school has been slipping lately. I just don't think they are doing a fantastic job in the Chinese curriculum, hence my motivation to homeschool M in this area. 

M has certainly reaped the benefits of a Montessori education so far. He is independent, confident and able to think for himself, just to name a few qualities. I'm sure staying there for another 2 years may help to enhance his development. But I also think that if we transfer him to a non-Montessori school this year, he will take with him the skills that he has learnt and work on what he is lacking.

The only problem - I can't find a better alternative that meets all our requirements. So for now, we shall leave it at status quo and work on deciding whether to enrol him to a local primary school at age 6+ or an international school for the IB PYP, and if latter, at what age and which one.

As for little Chip, our previous plan was to enrol him in M's school for daily 3hr class starting this May. After more thoughts, we are going to postpone that to August or maybe even January 2010. I think he will benefit more to be home with me, at least till he turns 3, as long as we keep up with our weekly homeschooling. 


He constantly amazes me in terms of how much and how fast he picks up. He can certainly handle more stimulation. 

I am fine tuning our homeschooling activities to incorporate right-brain training and stronger emphasis on certain areas to accelerate learning and build on his strengths.

Perhaps he will attend some weekly enrichment, but only if I think they are truly beneficial. 

He was playing quietly on his own one morning when he exclaimed 'Mummy, look at the diamond and hexagon!'. He had formed hexagon with 2 trapeziums, a circle with semi-circles and a rectangle out of squares! *smile*

Craft: A Pink Piggy

After showing the boys how to mix red and white into pink, I couldn't resist getting them to make a Piggy craft. After all, the 4yo adores his stuffed Pig and lil Chip can't live without his Piggies.

When I brought out the materials, they couldn't wait to paint the pig and stick the pre-cut ears and legs onto the plates! The swine even has a wiggly tail made of a pink pipecleaner!




The completed pig craft looks a tad too pink! Eeks! 

So we mixed up some brown paint another day and the boys touched up with some patches before putting it up on the wall next to Chip's bed.

Bento #30 - Two Boys Bento



The first bento I made this year and it was for the 4yo's lunch at school this week.

I have been so busy with homeschooling that I haven't shopped much. So this bento was made up of mostly the last few items I had left in the fridge/freezer. The last bit of cauliflower (still fresh as I bought it just two days before) and last pack of salmon in the freezer and the very last egg! :D 

But my 4yo didn't talk about the faces on the bento. He just told me he loved the egg, cheese and the seaweed on the rice. Hmmph! 

Brewing a Plan...

The delivery man came and left. Leaving behind a large box of groceries and two big packets of yellowish popcorn, peeping out of the plastic bag.

The 4yo picked up a pack and handed it to me as I unpacked the rest.


He: 'Wow.... this popcorn looks so yummy! But I can't eat it now right? Only after dinner." 

I: "That's right, sweetheart." (In the background, the 2yo asked for milk)

He: "N, would you like to eat popcorn or drink milk?"

Nic: "I want milk. I don't like popcorn."

He: "But you do! You are going to love popcorn! How about some popcorn and milk together?" 

Nic: "I want milk! I want milk and popcorn!"

He: "Mama, N wants milk and popcorn now. So can I also have some popcorn too?"

The New Greeting

My 2yo has officially changed his greetings. 

He used to be the polite little sweetie in the neighbourhood who greeted every uncle and auntie with a 'Hello'. 

Not anymore.

Lately, if we get into a lift and see someone in there, my boy looks straight in the guy's eyes with his arms outstretched. The greeting that falls out of his mouth now - 'I am Buzz Lightyear!'

And in response, we usually get a lot of "Huh?" or "Er.... what did the boy say?" and I have to do some quick explanation of who Buzz Lightyear is. 

There are also times when all we get is a lift full of faces with blank looks. These people either couldn't be bothered to respond or too embarrassed to ask, so they chose to stare at their shoes or the lift buttons. When that happens, I try hard not to laugh. 

My little tot was just too oblivious to the reactions his new greeting is summoning. He continues to try it on every Tom, Dick and Harry we bump into.

A little role play here with Buzz and Woody who is being puppeted by me. 

What is funny too - just a few months ago, it was the the older brother who was all crazy about Buzz Lightyear.

Party at St. Regis

A few Fridays ago, we went to the St. Regis for a dinner and dance party thrown by E's company. 

It is always fun to dress up for some special occasions. I would have curled my hair and dolled up more if I had more time. After bathing the boys, fixed them dinner and briefed my mum who kindly came over to babysit, I was left with only 45min to get party-ready from my state of total 'homeliness'. 

When we got there, I was so pleased with my choice of outfit after scanning the room. I am glad I didn't wear something too simple or a standard black dress. It would have been too boring. I love this Kookai lacey dress that I bought from London years ago. Each time I wore it, it never failed to draw very nice compliments, even from strangers. 

 
We often forget to take photos of just the two of us, except in functions like this. So this is a rare keep.



Of course, our dear friend, Howard Lo was there and I couldn't resist teasing him about rubbing my shoulders with the 'star' and to have a snapshot with my most famous friend.

Though it has been years since his TV debut at the 'Eye For A Guy 2' with Denise Keller, we still have such a laugh teasing him whenever we bumped into each other. He is really a good sport and a big sweetie. 



Great company at the table. We wined and dined. We chatted and laughed. It was such an awesome night!
